CULA-111 Garde Manger ICredits 3 / 3 Contact HoursPrerequisite: Placement into RDNG-016 (ACSR-016) Prerequisite: CULA-101 and FMG.-102 This course provides the student with a foundation in Garde Manger including history ingredients procedures culinary terms equipment knife skills and sanitation practice. Emphasis is placed on classical techniques using modern recipes and preparation styles. Three hours scheduled practicum per semester. |
